My hubby ordered A1 dry noodle and I ordered B2, hot and sour noodle soup. It was definitely very hot (temperature hot) and sour from the bamboo shoots. We both enjoyed our food, but what I'm still thinking about is the sauteed lettuce with garlic sauce. It sounds so simple, but absolutely delicious - I ended up scarfing it down.

It was my first time trying this classic guilin dish. The crispy pork and beef tripe toppings were my favorite. I wish they added more pickled green beans, as they added a nice refreshing taste. 1 portion doesn't look big but it's actually quite filling. I couldn't finish all the noodles. The meal came with a complimentary drink. I asked what it was and it turned out to be a monk fruit drink - very interesting sweetness that only hits you after swallowing, with a slight medicinal lingering taste. I'm not used to that flavor, but it was very interesting to try.

I've passed by this spot many times during my lunch walks and finally got a chance to try it! I usually get Guilin rice noodles from other places in the area, so I was excited to see another option. I ordered the A1 House Special Pot-Roasted Guilin Rice Noodles with marinated beef, beef tripe, and crispy pork. I really enjoyed it, the flavors were great, the portion size was generous (I could probably split it into two meals), and the price was very affordable. The only downside is that the dish was a bit greasy, but I appreciated the bowl of clear broth they provided to balance it out.

I go here almost every week and usually get the A1. The noodles come dry with a side of seaweed soup. It's delicious. The noodles are bouncy. The different texture meats are cooked perfectly - especially love the crispy pork belly. I love the added acidity that comes from the pickled green beans and the roasted crunchy peanuts is chef's kiss. They have fresh chopped chilies you can add which I think completes the dish for me. Highly recommend!
